Creepy Cupcakes: Zombie Fingers

Greetings Year of Halloween readers! I am Amy, aka Queen of the Muffin Pan. When Eva Halloween asked me to post on her very fabulous blog, I had to come up with something that was worthy of her reputable creepiness. No ordinary cupcake would do. So I racked my brrraaaaiiiiiiinnnnnnnn and lo and behold I came up with something I think is sure to delight and possibly revolt…

Cue Zombie Finger Cupcakes!

This recipe is very easy to follow. All it takes is:

  • One box of cornbread muffin mix
  • Cocktail weenies or breakfast sausage links
  • Pepitas (pumpkin seeds)
  • Spinach or Kale
  • Green Chilies

First and foremost, set that oven to 350f. Then, start by mixing your cornbread as directed. Spray your pan down and scoop the cornbread into each cup. 3/4 full will ensure it doesn’t spill out. Bake for 15 min. While they are par-baking, create the Zombie fingers. Depending on the size of the sausage links, you may need to cut them in half. Grab a handful of pepitas and start creating fingernails on each sausage.

Take care that you slide the pepita only far enough to hold it in place. Use the photo above as a reference. Once you’ve completed the fingers and the cornbread has cooked for 15 minutes, take the tray out of the oven. Put the zombie fingers in the partially cooked cornbread muffin. Add as much spinach/kale/green chilies as you’d like to create “grass.”

Once you have your zombie scenes completed, place the muffins back in the oven for approx. 10 more minutes. Just when the edges start to brown, take the muffins out. Allow them to cool and enjoy!

  5. I SO can’t believe no one’s said this, so here it goes… “They’re finger-lickin’ good!” (Sorry. Not my fault. It had to be said) (^_^)

    • I seriously sat righting this post trying to figure out the most clever slogan for these and I just couldn’t. Eva had to create the “bite them before they bite back” but finger lickin good? DUUUHHH How could I not have thought of that. Thank you for being creative when I couldn’t!
